I have my 3 banks setup on my IU switch with the different flight parameters for each bank but what I would like to do if possible is use a 2nd switch just for changing inputs parameters. ie if I want different pitch expo and pitch pump so I can turn them on/off with different flight modes.

To do this, you could use for example the "Dials" functions (ADVANCED => Common, "Receiver" => "Calibration Dial") assigning as control channel for the parameter you want to change a radio channel that on the transmitter is assigned to a two or three position switch (or even the same switch you use to change idle) and setting on the transmitter to the switch the values you want to use to increase or decrease the controlled value from the setup value.
